This is a hiking course designed to introduce students to a number of wild edibles that are found in the central Illinois area and throughout the Midwest. This course will cover an array of local wildlife plant species that are edible and some that are medicinal. We will discuss how these plants can be harvested, prepared, a what their reported medicinal qualities are and how they might have been used in traditional medicine. We will discuss the many uses for Common Plantain, Mullen, and Henbit. We will discuss how Mustard-Garlic can spice up your best hamburger. We will make a batch of Dandelion tea and discuss the many uses for Dandelions.
